Fried Cakes for a Raining Day.

So, today is my first day off!
The feeling of being at home is GREAT! I love being home with my kids!
Day number 1 was a raining day and the kids slept in and it was just a quiet calm day.

After a lazy morning and an afternoon nap, kids wanted an afternoon snack.
When I am home I love to cook for them.

Today I made a Brazilian favorite:
Bolinhos de Chuva- Brazilian Fried Raining Cake.
I would love to share this super easy recipe with you:
Ingredients:
– 2 eggs
– 1 cup of sugar
– 2 1/2 cups of all purpose flour – I use it unbleached
– 1 teaspoon of baking powder
– 3 spoons of sugar
– 1 spoon of cinnamon powder
– 1 liter of oil (to fry the cake)

How to prepare:
1. Mix all ingredients until you have a homogeneous creamy mix.
2. Heat a pan with oil so the cakes can boil (taller pan)
3. When the oil is really hot, grab a spoon of the mix and place the pasty mix in the oil. Leave the cake in the oil until they become golden on the outside. (a few seconds will do)
4. Place the cakes on a paper towel and then mix them on the sugar and cinnamon.
